The heart of the Soul Brewing Company is award winning brewer, Allen Wallace. After many years of planning and preparation, in 2018 Allen decided to open his own brewery and tap room. The microbrewery opened in March of 2020.

Pale Ale in the Anglo-American tradition, made with New York State ingredients. A balance of malt with bitterness and the citrus, pine and earthiness of Cascade and Centennial hops, courtesy of Chimney Bluffs Hoppery. 5.4% ABV/ 16 oz

IPA like they used to make, with an assertive bitterness over a solid malt backbone, and aromas and flavors of citrus, pine, and loam from generous additions of Centennial, Simcoe, and Amarillo hops. Named in honor of the amazing Sly Stone. 6.7% ABV / 14.5 oz
A collaboration with Run & Hide Brewing Company, this hazy double IPA is bursting with aromas and flavors of peach, guave, citrus, and fruity pebbles. Triple-dry hopped with Galaxy. 8.6% ABV /12oz
This lightly sour Gose-style wheat ale is brewed with Himalayan Pink Salt, Coriander, and a healthy dose of fresh lime zest in secondary fermentation. Lightly tart with a mild saltiness, and notes of lime popsicle or sherbert. Almost like a tart Marguerita. 4.9% ABV / 14.5 oz
A Belgian Farmhouse Style Ale, crisp & dry with silky mouthfeel and unique yeast-driven notes of citrus, cracked pepper, and spice. Refreshing beer originally made by and for farmers. 6.5% ABV / 750 ml bottle
Belgian Brown monastic-style ale made with traditional candi-syrup. A rich, dark ale of great character with notes of caramel, plums, spice, and dried fruits. 7% ABV / 12 oz
Belgian monastic style strong dark ale with figs & a dash of cinnamon. Flavors of caramel, figs and other dark fruit with a subtle spiciness and warming alcohol. Roasty and slightly sweet stout, deep garnet color with a creamy texture from the use of oats, notes of coffee and chocolate, and a firm bitter chocolate finish. 4.75% ABV / 16 oz
Opaque, strong stout with roasted flavors reminiscent of coffee and dark chocolate, over a boozy sweet finish. Available only by the glass in the taproom. No growlers or crowlers to go. 9.3% ABV / 12 oz
This is a one-off variation on Nocturne Imperial Stout. A strong, sweetish stout aged on Cinnamon and Free-Trade Madagascar Vanilla Beans, and coffee from The Black Cow, Pleasantville, to simulate the flavors of your favorite coffee cake in a decadent beer.
